Achar (Pickle)

If there is something in Indian/Pakistani cuisine I looooove is Achar (pickle). You find garlic pickle, mixed pickle, chili pickle but the most popular is mango pickle. In Pakistan you have two companies that make achar: National and Shan. But  you can buy in bulk in some markets and baazars. It is so delicious. You can mix it with your food or simply eat it with paratha (bread) like they eat here for breakfast for example.








INGREDIENTS

  • Kairi-1 kg (Cut into Pieces)
  • Cumin-1 tsp
  • Turmeric-1 tsp
  • Fennel Seeds-1 tbsp
  • Black Seeds (kalonji)-1/2 tsp
  • Carom Seeds (ajwain)-1/2 tsp
  • Fenugreek Seeds (methi dana)-1/2 tbsp
  • Rai dana-1 tsp
  • Crushed Red Pepper-2 tbsp
  • Vinegar-1 cup
  • Mustard Oil (sarson ka tail)-2 cup
  • Salt- As required

COOKING DIRECTIONS

Take a pan Put 2 cups of water, vinegar and kairi and heat up the water.

After that add salt, turmeric, and cook it until kairi gets soft.
Take a large size pan put mustard oil in it.

when it get hot then add red pepper, black seeds, rai dana, cumin, fenugreek seeds, fennel seeds, carom seeds, and remove it from the oil immediately.

Put this oil with all seeds in kairi. Mango pickle is ready.
